Quark makes nice topping for desserts
The great thing about summer fruit crumbles, cobblers and crisps is their do-aheadability: Pull one from the oven an hour before mealtime, and its molten center will have cooled to a more tongue-friendly temperature by the time you cut the first piece.
For the topping, you could return to the heat of the kitchen and whip up some cream. Or, you could simply pop open a container of vanilla bean quark and, as shown here, drizzle to your heart's content.
A soft, unripened cheese, quark is one of several dairy products made by Spring Hill Cheese Co. of Petaluma for sale at farmers markets in Ventura County and beyond.
With a natural tang that counterbalances the brown-sugar sweetness of fruit cobblers, Spring Hill's quark is available plain and in flavors such as lemon, the newly introduced vanilla bean and seasonal pumpkin. It is $5 per 8-ounce tub.
Also in the markets: eggplant, $2.50 per pound, and heirloom tomatoes, $3 per pound.
