Questions to Rhett Mauck: What prompted you to start your own business? I had extensive experience in the bar and restaurant industry, and saw most of my profits slip away through theft, mismanagement of alcohol and varying degrees of bartender training. I thought there had to be a way of using the accountability the restaurant had in all other avenues and applying it to the bar specifically.

What is your educational and career background? I graduated from Adolfo Camarillo High School in 1998. I have a bachelor's in English from San Diego State University. I also have more than five years of restaurant experience, including management, ordering, serving and bartending.

How much research did you do before starting your business? A lot, mostly because I was unaware that Bevinco existed. I did a lot of research on my own about profit management before purchasing the franchise.

What were the most helpful sources, including Web sites? Local restaurant and bar owners in downtown San Diego and Bevinco.com.

When were you the most discouraged? It is difficult to raise owner awareness that our service exists. Since Bevinco is a relatively new way of maximizing profits in an industry that is slow to change, it is discouraging to try and gain new business when no one even knows you are in the market.

What company or individual do you admire? I have great admiration for most bar and restaurant owners because it is a much more difficult job than people realize without ever having to do it. The reason I got into this industry is because it is extremely interesting and engaging, but a great deal of work.

What will make your business stand out from competitors? We are the most complete and accurate independent auditing system available. Other companies sell "home" auditing kits for owners to conduct their own inventories, but Bevinco performs all of these tasks plus a great deal more without the owner ever having to count a single bottle or pay an employee.

Who is your target client/customer base? Any and every establishment that serves beer, wine or liquor.
