What is cardamom?
Q: I have a recipe that calls for cardamom. What exactly is it
and is there anything that I could substitute for it?

A: Cardamom is a spice related to ginger that grows in the tropics around the world. The pod, which is the size of a blueberry, has seeds that can be used whole or ground. White cardamom is ground and used in the famous Scandinavian Christmas bread, Stollen. Green cardamom can be used whole in stews or curries from India and in coffee in the Middle East, and black cardamom is used to flavor dishes from Africa.
It can be expensive to buy the whole pods or even the ground variety. Searching online and in mail order catalogs may result in better prices for this spice.
